Tim Smith brings a vast knowledge of hospitality and restaurants to his role as Certified Sommelier at Canyon Kitchen. Raised in an agricultural community, local produce and products were an integral part of his daily life. This history adds to his understanding of and appreciation for the culinary program at Canyon Kitchen, allowing him to best understand how to complement the cuisine with wines and spirits.
Smith began his restaurant career in the Baltimore/Washington DC metro area, handling back-of-house operations, before moving to North Carolina to attend East Carolina University. Smith worked for the acclaimed Biltmore Estate from 2009-2013 and established his love for Western North Carolina. Upon leaving Biltmore Estates in 2013, Smith worked as the Food & Beverage Manager and General Manager at the Cliffs at Walnut Cove. While at this position, he was awarded the CMAA Award for wine and beverage programming.
In 2015 Smith became one of the area’s few Certified Sommeliers through the Court of Master Sommeliers.
In 2017, Smith joined the team at Canyon Kitchen as Sommelier where he uses his past experiences and education to execute an impressive, yet approachable, wine program, while also emphasizing service and hospitality. He was also accepted to participate in the Court of Master Sommeliers Advance Seminar in Dallas in June 2017. Additionally, Smith is on track to take the Advance Sommelier test in fall 2018. He also mentors and trains future hospitality leaders and sommeliers.
