Hilary Lamont is the Pastry Chef at Asheville Proper, a live-fire steakhouse in the heart of downtown Asheville, NC. Inspired by the pages of Food Network Magazine and Bon Appétit, Hilary’s passion for the culinary industry sparked at a young age. Fueling this interest, her first job was working at a bagel and sandwich shop, where she admired the skill and care that went into the freshly made breads and ingredients. Hilary went on to study Hospitality Management at Florida State University, later earning a degree in Baking and Pastry Arts from Asheville-Buncombe Technical Community College in 2017.

Excited to further her experience and finesse her craft, Hilary went on to work at some of the city’s top destinations, including Biltmore and Sierra Nevada, as well as other well-established independent restaurants. With each role, she feels gratitude for the opportunity to fulfill her childhood dream and share her creations with others. In September of 2020, Hilary joined the team at Asheville Proper, where she leads the restaurant’s confectionary and pastry program of housemade desserts and scratch-made artisan breads. Complementing the kitchen’s menu of live-fire offerings, Hilary aims to incorporate an element of fire to each plate, whether that be torching meringue, smoking an ingredient, or adding some extra spice to a component.

When Hilary isn’t recipe testing or perfecting a new technique, you can find her hiking on the Blueridge Parkway, trying her hand at gardening, or enjoying the simple pleasure of completing a crossword puzzle.
