Meet Sophie Delany, the cheese enthusiast behind One Wicker Cheese Co.! Sophie grew up in the Chapel Hill area of NC and with parents in the hotel business, her roots in hospitality run deep. In 2014, after graduating from UNC and realizing that elementary school teaching was not her true calling, she packed up and moved to Highlands to pursue a career in Food and Beverage. Sophie started at Old Edwards Inn working in the Banquet department and made her way into management where she spent almost a decade learning, growing and experiencing the mostly magical world of F&B.

Over the years, Highlands became much more than just a place to build a resume, it became home, and Sophie began seeking a better balance between her profession and her new growing family. With a true love of cheese that started in her childhood kitchen, she embarked on a cheesy adventure, attending a Cheese Boot Camp in NYC and discovering a whole community of cheese enthusiasts. It really, truly began as a passion project and from that One Wicker Cheese Co. emerged.

Located in Highlands, NC this whimsical cheese haven is where you will find a rotating selection of artisanal and farmstead cheeses from North Carolina and beyond. Cheese has so much to offer, and Sophie is committed to creating something truly special in the heart of Highlands. Through One Wicker Cheese Co., she aims to spread the joy of cheese, build connections, support local producers and leave a lasting impact on every customer, one that extends beyond any cheese’s expiration date. ​
