Scoundrel Wine Dinner
In a fusion of culinary artistry, Chef Joe Cash, a 2024 James Beard nominee from Greenville’s acclaimed Scoundrel restaurant, is joining forces with the talented culinary team of The Ruffed Grouse Tavern. Together, they will present an unforgettable French-inspired menu that seamlessly blends tradition with innovation. Two seatings available, 5:30 and 7:30 P.M.

Guest chef Santiago Guzzetti—of Ilda in Sylva, with Michelin-star training and a rich culinary background rooted in Argentina and Italy—will craft a four-course menu showcasing French techniques and seasonal ingredients. The evening begins outdoors with passed champagne and caviar, followed by an immersive seated dinner inside the barn. Each dish will be cooked over a live fire.

The Highlands Supper Club is proud to host an exclusive, single-seating dinner with Oregon’s iconic Cristom Vineyards, featuring guided pairings by Jack Larkin of Pacific Southern Wine Company and a menu crafted by Chef Aaron Kulzer. Guests will enjoy a curated dining experience showcasing Cristom’s celebrated wines and the dishes designed to highlight their elegance and depth. The evening begins with a Kumomoto Oyster and bubbles, followed by a Warm Goat Cheese Tart with Eola-Amity Hills Chardonnay. A trio of world-class Pinot Noirs accompanies Roasted Beet Salad, Wild Mushroom Risotto, and Duck Breast with Cherry Gastrique. The experience concludes with a Dark Chocolate Terrine paired with a 20-Year-Old Port—a luxurious celebration of fine wine and culinary artistry.
